Brinjal & Cluster Bean Curry

Both these vegetables are my husband's favourite. Whenever, he go for vegetable shopping, he would buy these two veggies for sure. I learnt this curry recipe from my MIL. This curry goes good with rice as well with chappthi.


Ingredients:

1. Brinjal - 2 Cups (Cut pieces)
2. Cluster Bean - 1 Cup (Cut Pieces)
3. Onion - 1/2 Cup (Finely Chopped)
4. Garlic - 2 cloves (Finely Chopped)
5. Sambar Powder - 2 tsp
6. Red Chilly Powder - 2 tsp (Adjust to your taste)
7. Tamarind Juice - 3 tsp
8. Mustard - 1 tsp
9. Salt - Needed qty
10. Oil - 6 tsp
11. Curry Leaf - Small qty

Procedure:

1. Cook cluster bean with salt and keep aside.
2. In a pan, add oil. Then add mustard.
3. Add garlic and onion, fry them well till they turn golden brown.
4. Now, add salt, sambar powder, red chilly powder and brinjal pieces.
5. Mix them well. Medium the stove.
6. Fry for few minutes, till brinjal changes to brown colour.
7. Now add tamarind juice and cooked cluster bean. Mix them well.
8. Close the pan with a lid. Cook on medium heat for 20 minutes.
9. Garnish with curry leaf.
10. Serve hot with rice or chappathi.

  13. I too add sambhar powder to subjis,love it,its a good replacement for red chilli powder and dhaniya powder!
    You know wat,brinjal is my fav and cluster beans is my hubb's fav,but we both hate the other's favorite :P I have to try this subji and see :)
