Curd / Yogurt Rice - (Version 2)

After seeing the title 'Curd/Yogurt Rice", you may think "Hah! She is so strange! why this lady has to post a recipe for the easiest dish?". If you ask someone "Does curd rice need any special talents to prepare?" They would say "No need!" But, if you ask me I would say "Yes, yes, yes!" 

I wanted to make a post about this simple curd rice (especially for lunch box) because last weekend when we went to a restaurant here in Chennai, they served us a worst curd rice we have ever tasted. It was so sour that we could not even swallow down a single spoon of rice. We left a comment regarding this in their guest book before we left that place. This specific incident made me write this post. I have already posted another version of Curd/Yogurt rice, which you have to consume immediately or within 1 hour of preparation. But, when you prepare curd rice in the following way, even after 5 hours it would taste good without sour taste.




Ingredients :

1. Over Cooked Rice - 1 Cup (Use 3 Cups of water for 1 Cup of rice. Allow atleast 6 whistle in the pressure cooker)
2. Whole Milk - 1.5 Cups or little more (Boiled and cooled to room temperature)
3. Curd/Yogurt - 1/4 tsp (Not more than that)
4. Mustard - 1/2 tsp
5. Curry Leaves - A few
6. Oil - 1 tsp
7. Salt - Needed Qty

Procedure :

1. Mash the over cooked rice without any lumps when it is still hot.

2. Add salt and 1/4 tsp of curd/yogurt to the mashed rice. Mix them well.

3. Now add milk a little by little while mixing the rice. Add little more milk if needed.

4. Heat oil in a pan. Splutter mustard. Add curry leaves. Pour this seasoning over the curd rice. Mix well.

5. Serve with pickle and mor milakai. Tastes great if consumed after 3 or 4 hours. Best for lunch box.

Note :
1. As far as possible use fresh curd.
2. Please don't add any grated carrot or green chilly or ginger. Keep the seasoning as simple as possible only with mustard and curry leaves.

We use to make the way you mentioned for trips nithu! Most of the time the curd rice in the restaurants are sour!

My Dad makes best Curd Rice in the World. whenever i go for Vacation, i ask him to make it for me every day. Looks so Yum!!!!
