Pav Bhaji

We went for lunch at our friend's place on sunday. While we were talking, somehow this pav bhaji came in to our talk. I just remembered that I have not prepared this for months together. I really don't know, how it skipped out in my weekend menu too. While, on my way home I managed to buy the veggies and bun. I made this for the evening. Usually, I use store bought pav bhaji masala. My friend gave me the procedure for making pav bhaji masala at home. This time, I didn't have the enough ingredients and so, I used the store bought masala. I've given the masala recipe at the end and it is straight from her kitchen. I'm yet to try it :-)




Ingredients :

1. Pav Buns
2. Onion - 1/2 Cup (Finely Chopped)
3. Tomato - 1/2 Cup (Finely Chopped)
4. Potato - 4 (Peeled & Cut in to pieces)
5. Cauliflower - 1/4 Cup (Finely Chopped)
6. Peas - 1/4 Cup
7. Carrot - 1/2 Cup (Grated)
8. Coriander - 1/4 Cup (Finely chopped)
9. Green Chillies - 2 (Finely chopped)
10. Jeera powder - 1/2 tsp
11. Coriander powder - 1/2 tsp
12. Turmeric powder - 1/2 tsp
13. Red Chilly powder - 2 tsp (Adjust to your taste)
14. Pav Bhaji Masala - 3 tsp
15. Ginger-garlic paste - 1 tsp
16. Oil - 1 tbs
17. Butter - 1/2 tbs
18. Salt - Needed qty
19. Lemon Juice - 3 tsp

Procedure :

1. In a pan, heat oil. Add ginger-garlic paste and fry till raw smell goes.

2. Now, add onion, green chillies and tomatoes. Fry well, till onion turns brown.

3. Meanwhile, pressure cook all the other vegetable. Mash them and Keep aside.

4. To the onion & tomato, add salt, jeera powder, coriander powder, Chilly powder, Pav Bhaji masala and turmeric powder. Mix well.

5. Now, add the mashed vegetables. Simmer the stove and allow the contents to cook for about 20 minutes. Add lemon juice.

6. Garnish with coriander.

7. Slit open the buns, apply butter. Toast the buns over a skillet till golden brown.

8. Serve hot with bhaji, onion and lemon pieces.

Recipe for Home made Pav Bhaji Masala:

Ingredients :

1. Red chilli powder - 1 cup
2. Turmeric Powder - 4 tsp
3. Coriander seed - 1 cup
4. Cumin seed - 1/2 cup
5. Dry Mango powder - 3 tsp
6. Cardamom - 15 gm
7. Cinnamon - 2 sticks
8. Cloves - 15 Nos
9. Pepper - 5 gm
10. Saunf - 1 tsp
11. Bay Leaf - 2 No
12. Star Anise - 5 gm
13. Black salt - 1 tsp

Procedure :

1. Dry roast all the ingredients except redchilly powder and turmeric powder.
2. Blend to a fine powder.
3. Mix the powders and store it in air tight container.
