Parangi Pinju Kara Adai / Baby Pumpkin Spicy Adai / பரங்கி பிஞ்சு கார அடை


Pumpkin, a low calorie vegetable is rich in vitamin-A, vitamin-C and vitamin-E. Pumpkin has all essential nutrients needed for baby’s development. Pumpkin actually helps to boost up the immune system in babies.

Ingredients :

1. Baby Pumpkin - 1 Cup (Chop in to small thin pieces)
2. Thoor Dhal - 1/2 Cup
3. Channa Dhal - 1/2 Cup
4. Raw Rice - 1/2 Cup
5. Parboiled Rice / Idly Rice - 1/2 Cup
6. Red Chilly - 6 or Adjust to your taste
7. Fennel Seeds - 1/2 tsp
8. Asafoetida - 1/2 tsp
9. Curry Leaves - A Few
10. Salt - Needed Qty
11. Oil 




Procedure :

1. Combine dhal and rice together. Wash and soak along with red chilly for atleast 1 hour.

2. Now, grind coarsely along with fennel seeds and asafoetida.

3. Add salt, curry leaves and chopped baby pumpkin. Mix well.

4. Heat a tawa. Medium the flame. Spread a ladleful of adai batter evenly. Add oil around the edges.

5. Turn the flame to high. Wait till it turns brown and crisp. Flip to other side. Medium the flame.

6. Once cooked, serve hot with coconut chutney and avial.

Bottle Gourd Adai / Sorakkai Adai - with step-by-step pictures

Sorakkai (Bottle Gourd) Adai, is one of the traditional breakfast dishes. I learnt this easy recipe from my husband's Grandma. I have not added onion here and if you want, you can add 1/4 cup of finely chopped onion, chopped cilantro and curry leaves.

Ingredients :

1. Raw rice -1/2 cup
2. Idly rice -1/2 cup
3. Green Chilly - 2 or 3
4. Bottle gourd (Sorakkai)– 1 cup (Grated)
5. Salt - Needed Qty





Procedure :

1. Soak raw rice and idly rice together for 8 hours or overnight.




2. Grind the rice with green chillies and salt. Use a little water while grinding. The batter need to be in thick consistency.




3. Now, Wash, peel and grate the bottle gourd.






4. Squeeze the grated bottle gourd and add it to the ground rice.




5. Mix the ground rice and grated bottle gourd well.



6. Now, heat a dosa pan, add a teaspoon of oil.




7. Gently place a ladle of batter in the centre of the dosa pan. Just spread it with the ladle or you can spread with your hands, if you have experience already. Drizzle another teaspoon of oil over the surface of the adai. Let it cook on medium flame. It will take few minutes to cook.



8. Now, flip the adai and allow to cook for another few minutes.






9. Serve hot with coconut chutney.

Thoor Dhal Adai

There are so many types of Adai.The simplest one is with rice and thoor dhal.This will take just an hour for preparation.

Ingredients:

1.Raw Rice - 1 Cup
2.Idly Rice - 1 Cup
3.Thoor Dhal - 1 Cup
4.Red Chillies - 7(More or less depending on your taste)
5.Salt - Needed qty
6.Onion - 1 Medium(Chopped finely)
7.Curry leaf - Small qty
8.Coriander - 1/2 Cup(Finely Chopped)
9.Oil - Needed qty





Procedure:

1. Soak rice,dhal and red chillies together for 45 minutes.

2. Grind them coarsely. The batter should be like idly batter in consistency.

3. Now, add salt, chopped onion, curry leaf and chopped coriander. Mix well.

4. Heat tawa and pour 2 ladleful of batter and spread evenly (like dosa).

5. Add oil along the sides.

6. Cook both the sides till golden brown.

7. Serve hot with avial or coconut chutney.
