Mint Aloo Chaat


Mint Aloo is a colourful and healthy Chaat for kids. This can also be served as a curry with any Indian bread or Rice. You can use baby potatoes to prepare this. When you serve this as a chaat, throw a handful of sev on the top and serve hot.

Ingredients :

1. Potato - 4 ( Medium Sized)
2. Onion - 1/2 Cup (Chopped lengthwise)
3. Coriander Leaves - 1 Cup
4. Mint leaves - 1 Cup
5. Ginger-Garlic Paste - 1 tsp
6. Green Chilly - 2 or Adjust to your taste
7. Chaat Masala - 1 tsp
8. Garam Masala - 1/2 tsp
9. Salt - Needed Qty
10. Butter - 1 tsp
11. Oil - 1/2 tbs
12. Lemon Juice - 2 tsp



Procedure :

1. Wash and pressure cook potatoes. Remove skin and cut in to bite sized pieces. Keep aside.

2. Take mint leaves, coriander leaves, green chilly, salt, chaat masala and garam masala in a mixer jar. Grind with a little water to a fine paste. Keep aside.

3. Heat oil in a pan. Add onion and saute till it turns transparent. 

4. Add ginger-garlic paste. Saute on a medium flame till the rawa smell of ginger-garlic paste is gone.

5. Add the ground mint-coriander leaves paste. Mix the ingredients well. Keep sauting on low flame for few minutes.

6. Add potato. Mix thoroughly. Keep in medium flame for 5 minutes.

7. Add butter. Mix once. Switch off the stove.

8. Add lemon juice. Mix well.

9. Garnish with sev and serve hot.

Quick & Easy Bhel Puri

This time for bhel puri, I didn't prepare green or sweet chutney. Instead I replaced them with chilly and tomato sauces. I didn't complicate the procedure by making papdis this time. I just used the leftover thattai. 
I had sev at home, so it was really quick and easy. We enjoyed this chaat that was prepared in no time. 





Ingredients :

1. Puffed rice/Pori - 1.5 Cups
2. Sev/Omapodi - 1/2 Cup
3. Papdi/Thattai - A few (Broken into pieces)
4. Chilly Sauce - 1/2 tsp
5. Tomato Sauce - 1 tbs
6. Onion - 1/2 Cup (Finely Chopped)
7. Tomato - 1 (Finely Chopped)
8. Coriander - 1/4 Cup (Finely Chopped)
9. Lemon juice - 1 tsp
10. Chaat Masala - 1.5 tsp
11. Salt - 1/4 tsp



Procedure :

1. Take all the ingredients in a large vessel.(Reserve a small quantity of sev for garnishing).

2. Mix everything together.

3. Garnish with sev and serve immediately.

Protein Rich Pav Bhaji and A Product Review

Pav Bhaji is a famous fast food dish of Maharashtra. In general, bhaji is prepared with mashed potatoes and other vegetables. I replaced potatoes with chickpeas and peas in this recipe. You can check the bhaji recipe with potato and other vegetables here.





Chandrika Pav Bhaji Masala is mildly flavoured with all the spices. The masala really gave a nice aroma and colour. As the masala already contained chillies and pepper, I didn't use any extra chilli powder. If you want it to be more spicy, you can either add chopped green chillies or red chilli powder.

Ingredients :

1. Chickpeas - 1 Cup (Soaked and Cooked)
2. Peas - 1 Cup (Cooked)
3. Onion - 1/2 Cup (Finely Chopped)
4. Tomato - 1/2 Cup (Finely Chopped)
5. Bell Pepper - 1/4 Cup (Finely Chopped)
6. Carrot - 1 (Grated)
7. Cauliflower - 1/4 Cup (Finely Chopped)
8. Ginger-Garlic Paste - 1 tsp
10. Salt - Needed Qty
11. Coriander - 1/4 Cup (Finely Chopped)
12. Oil - 1 tbs
13. Lemon Juice - 2 tsp




Procedure :

1. Cook chickpeas and peas together.

2. Take half the quantity of cooked chickpeas and peas.Blend till smooth. Keep aside.

3. In a pan, add oil and Saute onion till soft.

4. Now, add ginger-garlic paste to the onion. saute till the ginger-garlic paste turns golden brown.

5. Add tomato, chopped bell pepper,cauliflower, grated carrot cooked chickpeas and peas. Mix them all together with salt.

6. Add, a cup of water and Chandrika Pav Bhaji Masala or any Pav Bhaji Masala you have.

7. Cover the pan with lid and let the contents cook well.

8. After about 15 minutes, add chickpeas and peas paste to the contents in the pan.

9. Wait till the contents get thickened with occasional stirring. Add lemon juice.

10. Garnish with chopped coriander.

11. Serve hot with toasted pav buns.





They sell the PavBhaji Masala at reasonable cost (100 gms for $2.50). The masala is really fresh and prepared in home-made style. They do ship their products all over US and you can order through their website.

Pav Bhaji

We went for lunch at our friend's place on sunday. While we were talking, somehow this pav bhaji came in to our talk. I just remembered that I have not prepared this for months together. I really don't know, how it skipped out in my weekend menu too. While, on my way home I managed to buy the veggies and bun. I made this for the evening. Usually, I use store bought pav bhaji masala. My friend gave me the procedure for making pav bhaji masala at home. This time, I didn't have the enough ingredients and so, I used the store bought masala. I've given the masala recipe at the end and it is straight from her kitchen. I'm yet to try it :-)




Ingredients :

1. Pav Buns
2. Onion - 1/2 Cup (Finely Chopped)
3. Tomato - 1/2 Cup (Finely Chopped)
4. Potato - 4 (Peeled & Cut in to pieces)
5. Cauliflower - 1/4 Cup (Finely Chopped)
6. Peas - 1/4 Cup
7. Carrot - 1/2 Cup (Grated)
8. Coriander - 1/4 Cup (Finely chopped)
9. Green Chillies - 2 (Finely chopped)
10. Jeera powder - 1/2 tsp
11. Coriander powder - 1/2 tsp
12. Turmeric powder - 1/2 tsp
13. Red Chilly powder - 2 tsp (Adjust to your taste)
14. Pav Bhaji Masala - 3 tsp
15. Ginger-garlic paste - 1 tsp
16. Oil - 1 tbs
17. Butter - 1/2 tbs
18. Salt - Needed qty
19. Lemon Juice - 3 tsp

Procedure :

1. In a pan, heat oil. Add ginger-garlic paste and fry till raw smell goes.

2. Now, add onion, green chillies and tomatoes. Fry well, till onion turns brown.

3. Meanwhile, pressure cook all the other vegetable. Mash them and Keep aside.

4. To the onion & tomato, add salt, jeera powder, coriander powder, Chilly powder, Pav Bhaji masala and turmeric powder. Mix well.

5. Now, add the mashed vegetables. Simmer the stove and allow the contents to cook for about 20 minutes. Add lemon juice.

6. Garnish with coriander.

7. Slit open the buns, apply butter. Toast the buns over a skillet till golden brown.

8. Serve hot with bhaji, onion and lemon pieces.

Recipe for Home made Pav Bhaji Masala:

Ingredients :

1. Red chilli powder - 1 cup
2. Turmeric Powder - 4 tsp
3. Coriander seed - 1 cup
4. Cumin seed - 1/2 cup
5. Dry Mango powder - 3 tsp
6. Cardamom - 15 gm
7. Cinnamon - 2 sticks
8. Cloves - 15 Nos
9. Pepper - 5 gm
10. Saunf - 1 tsp
11. Bay Leaf - 2 No
12. Star Anise - 5 gm
13. Black salt - 1 tsp

Procedure :

1. Dry roast all the ingredients except redchilly powder and turmeric powder.
2. Blend to a fine powder.
3. Mix the powders and store it in air tight container.
