Carrot and Pomegranate Salad


Ingredients :

1. Carrot - 1 Cup (Grated)
2. Pomegranate - 1/2 Cup
3. Lemon Juice - 2 tsp
4. Green Chilly (Optional) - 1 (Finely Chopped)
5. Salt - Needed Qty





Procedure :

1. Combine all the ingredients together.
2. Serve Chilled.

Apple & Barley Chat


This is a healthy and delicious chat. This would taste all the more delicious when mixed fruits are combined. I didn't have any other fruit with me today, so just ended up with apple and barley.

Ingredients :

1. Apple - 1/2 Cup (Chopped)
2. Barley - 1/2 Cup (Cooked)
3. Red Chilly Powder - 1/2 tsp
4. Chat Masala - 1/2 tsp
5. Lemon Juice - 1 tsp
6. Salt - 1/2 tsp



Procedure :

1. Combine all the ingredients.
2. Serve immediately or chilled.

Spicy Fruit Salad


This is an easy to make yummy salad. This is bit different from the usual salad I make. Here, I used red chilly powder instead of pepper powder. This addition gave a fine colour when it got mixed with the fruits. The fruit salad looked colourful as well it tasted too good.

Ingredients :

1. Pappaya - 1/2 Cup (Cut in to pieces)
2. Mango - 1/2 Cup (Cut in to pieces)
3. Apple - 1/2 Cup (Cut in to pieces)
4. Orange Juice - 1/4 Cup
5. Chat Masala - 1 tsp
6. Red Chilly Powder - 1/2 tsp
7. Salt - Needed qty



Procedure :

1. Combine all the ingredients. Mix well.
2. Serve immediately or chilled.

Cauliflower & Orange Salad


This cauliflower salad is the one which I make often. But this time, I added few veggies extra. With all those additions, it tasted all the more yum.

Ingredients :

1. Cauliflower - 1(small) (Cut florets to bite size pieces)
2. Peas - 1/2 Cup (Fresh/Frozen)
3. Red Bell Pepper - 1 (Cut in to pieces)
4. Mint - Small Qty (Chopped finely)
5. Orange - 1
6. Lemon - 1 (take the juice from the lemon)
7. Pepper powder - 2 tsp or adjust to your taste
8. Salt - Needed qty.



Procedure :

1. Cook cauliflower and then combine it with all the veggies and orange.
2. Mix lemon juice, pepper powder and salt together.
3. Pour the dressing over the veggies and toss to coat.
4. Arrange on the serving plate.
5. Serve chilled.

Kachumbari - East African Salad


Kachumbari is an Eastern African salad primarily prepared with finely cut tomatoes and onions served with pilaf. Sometimes cabbage, chile peppers and other vegetables are included. The basic version is with tomatoes and onions dressed in lemon juice or vinegar. This is the traditional Rwandan (East Africa) recipe.




Ingredients :

1. Tomato - 4 (Cut in to thin pieces)
2. Onion - 1 (Large, Cut in to thin pieces)
3. Lemon Juice - 1/2 Cup
4. Salt - Needed qty
5. Coriander - Little qty (Finely Cut)




Procedure:

1. Combine all the ingredients in a bowl.
2. Toss to coat all the ingredients with liquid.
3. Set aside in a cool place for atleast 20 minutes.
4. Serve with other Eastern African dishes like Pilaf.

Mixed Vegetables and Fruits Salad


Ingredients:

1. Red Cabbage - 1 Cup (chopped)
2. Carrot - 1 Cup (Finely chopped)
3. Bell Pepper - 1/2 Cup (chopped)
4. Brocolli - 1 Cup (chopped to small pieces)
5. Green Onion - 1/2 Cup (chopped)
6. Red onion - 1/4 Cup (chopped)
7. Ginger root - 2 inch piece (grated)
8. Garlic - 2 Cloves (crushed)
9. Peas - 1/2 Cup
10. Mung bean sprouts - 1/2 Cup
11. Apple - 1 Cup ( chopped to pieces)
12. Pineapple - 1 Cup ( chopped to pieces)
13. Raisin - 1/4 Cup
14. Cashew - 1/4 Cup

For dressing,

1. Lemon juice - 1/4 Cup
2. Orange juice - 1/2 Cup
3. Honey - 2 tsp
4. Pepper powder - 4 tsp
5. Soy sauce - 2 tsp



Procedure:

1. Whisk the dressing ingredients and Keep it aside.
2. Now, combine all the other ingredients in another bowl.
3. Toss with dressing.
4. Serve immediately or chilled.

Honey Fruit Salad



Ingredients:


1. Apple - 1 Cup (Cut pieces)
2. Pineapple - 1/2 Cup (Cut pieces)
3. Mango - 1/2 Cup (Cut pieces)
4. Banana - 1/2 Cup (Cut pieces)
5. Cashew - Small qty
6. Pista - Small qty
7. Lemon Juice - 1/4 Cup
8. Orange Juice - 1/2 Cup
9. Honey - 1/4 Cup







Procedure:

1. Mix lemon juice, orange juice and honey using a blender.
2. Take fruits and nuts in a large bowl.
3. Add the contents from the blender to the fruits and mix well.
4. Serve chilled.
