Chow-Chow / Chayote Sambar

This type of sambar preparation is famous in Tanjore district of Tamil Nadu. Arachuvitta sambar is also another preparation that is very famous in this region. The recipe for sambar preparation is so simple and easy. Any vegetable can be used. You can also use combination of two or more vegetables. 

Ingredients :

1. Chayote / Chow-Chow - 1 (Small)
2. Onion - 1/2 Cup (Finely Chopped)
3. Thin tamarind juice - 2 Cups
4. Thoor Dhal - 3/4 Cup (Cooked)
5. Sambar Powder - 2 tsp
6. Salt - Needed qty
7. Mustard - 1 tsp
8. Asafoetida - 1/2 tsp
9. Oil - 1/2 tbs
10. Coriander - Little Quantity




Procedure :

1. Peel and thinly slice chayote. Keep aside.

2. In a pan, heat oil. Splutter mustard. Add asafoetida.

3. Add onion and chayote. Saute well for few minutes or onion turns golden brown.

4. Now, add tamarind juice, salt and sambar powder. Allow the contents to boil well.

5. Finally add cooked and mashed thoor dhal. Medium the flame.

6. Allow the contents to thicken.

7. Garnish with chopped coriander leaves.

8. Serve hot with Rice or Idly or Dosa.

Sprouted Horsegram Sambar / Mulaikattiya Kollu Sambar


Ingredients :

1. Mulaikattiya Kollu/Sprouted Horsegram - 1/2 Cup (Cooked)
2. Thin Tamarind Juice - 1.5 Cup
3. Sambar Powder - 1 tsp
4. Onion - 1/2 Cup (Chopped)
5. Tomato - 1 (Finely Chopped)
7. Corainder Leaves - Small Qty
6. Salt - Needed Qty
7. Oil - 1/2 tbs

For masala powder,

1. Coriander Seeds - 1 tsp
2. Cumin Seeds - 1/2 tsp
3. Fenugreek Seeds - Few Seeds
4. Red Chilly - 3 or adjust to your taste
5. Thoor Dhal - 1 tsp
6. Channa Dhal - 1.5 tsp
7. Coconut - 1.5 tsp
8. Asafoetida - 1/2 tsp

Dry roast the above ingredients and finely powder.

For tempering,

1. Mustard - 1 tsp
2. Urad Dhal - 1 tsp
3. Oil - 2 tsp




Procedure :

1. Cook and mash the horsegram. Keep aside.

2. In a pan, add oil. Add onion and tomato.Saute for few minutes.

3. Now add tamarind juice, water, salt and sambar powder.

4. Once the raw smell of the sambar powder is gone, add horsegram (Kollu) and masala powder.

5. Medium the flame and allow the contents to boil well.

6. Temper and then garnish with corainder leaves.

7. Serve hot with rice ot roti.

Sambar for Idly & Dosa



The recipe for this sambar is different from what we usually prepare.I call it podi(powder) sambar as we have to use podi (masala powder) for this.This masala is made out of Dhaniya,Jeera,Redchillies,etc..this actually adds taste and flavour to the sambar.This sambar goes good with Dosai,Idly,Vadai as well Pongal.

Ingredients:


1.Moong Dhal - 1/2 Cup
2.Thoor Dhal - 1/2 Cup
3.Sambar Powder - 2 tsp
4.Tamarind extract - 1/4 Cup
5.Onion - 1(Medium sized)
6.Tomato - 2
7.Curry leaf
8.Coriander
9.Salt - Needed qty
10.Oil - 2 tbs
11.Mustard - 1/2 tsp

For masala,dry roast the below ingredients,grind&Keep aside,

1.Dhaniya - 1 tsp
2.Jeera - 1 tsp
3.Red Chillies - 2
4.Channa Dhal - 1/2 tsp
5.Urid Dhal - 1/2 tsp
6.Asafoetida(powder) - 1/4 tsp

Procedure :

1.First pressure cook Moong dhal & Thoor dhal together&keep aside.

2.In a pan add oil and then add mustard.

3.Now add chopped onion and chopped tomatoes.

4.Fry them for some minutes.Now,add the tamarind juice.

5.Add sambar thool and salt. Mix well.

6.Allow it to boil well.Later add the cooked dhal. Mix well.

7.Cover the contents with a lid & keep it in stove for 10 minutes.

8.Now, add the masala and mix well.Keep the sambar in stove itself for 5 more minutes.

9.The sambar is ready now and garnish with coriander & curry leaves.
