Garlic Chutney Powder / Garlic Idly Podi / Poondu Podi

Garlic Chutney Powder/ Poondu Idly Podi is the best side dish for Idly or Dosa. The preparation is very quick and simple. This chutney podi can be stored in an air-tight container. You can prepare Garlic Podi Idly Fry using this podi. 

Garlic is packed with many health benefits. Regular intake of garlic helps in preventing cancer. Garlic reduces blood pressure and blood cholestrol.

Preparation Time : 5 Minutes
Cooking Time : 10 Minutes
Yield : 100 gms (Approximately)




Ingredients :

1. Garlic Cloves - 10 (with skin)
2. Red Chillies - 25 Nos
3. Salt - 3/4 tsp or Adjust to your taste
4. Oil - 1 tsp

Preparation :

1. Heat oil in a frying pan or kadai. Fry red chillies on medium heat. Let them cool.

2. Grind red chillies and salt together to a coarse powder.

3. Add garlic cloves. Just run the mixie only once. 

4. Transfer to an air-tight container.

5. Serve with hot idly or dosa. (Mix some oil before serving).

Curry Leaves Rice Mix / Karuveppillai Podi


This is a very healthy rice mix. You can prepare this podi in less than 15 minutes. For this, you need just a few ingredients. The procedure is so simple.

Ingredients :

1. Curry leaves  - 1 Cup (Heaped)
2. Urad Dhal - 1 tbs
3. Channa Dhal - 1 tsp
4. Red Chillies - 3 or Adjust to your taste
5. Salt - Needed Qty




Procedure :

1. Wash curry leaves and Spread the leaves on a clean kitchen towel. Let the towel absorb the moisture.

2. Now, in a pan dry roast urad dhal, channa Dhal and red chillies. Keep aside.

3. Dry roast curry leaves in a low flame. 

4. Combine all the  dry roasted ingredients and salt together. Grind to a coarse powder.

5. Store in air-tight container.

6. Serve with rice with a dollop of ghee.

Rasam Powder / Rasa Podi


Ingredients :

1. Coriander seeds - 3/4 Cup
2. Cumin seeds - 3/4 Cup
3. Toor dhal - 1/2 Cup
4. Black pepper - 1/4 Cup
5. Red chillies - 3
6. Curry leaves - A few
7. Turmeric Powder - 1 tsp (Optional)




Procedure :

1. Dry roast all the above ingredients and allow them to cool.

2. In a small mixer jar, grind the cooled ingredients to a coarse powder.

3. Transfer to an air-tight container.

4. Use 1 tsp of rasam powder for a bowl of rasam that serves for four.

Ellu Idiyappam & Ellu Podi : Two-in-one Recipe

Idiyappam (String Hoppers)is a specialty main course breakfast dish for Tamil Nadu and Kerala. Idiyappam is also called as sevai, noolappam or noolputtu. Idiyappam can be served with Coconut Milk, Vegetable Kurma or Coconut Milk Stew. Idiyappam can also be flavoured with coconut, lemon, sesame etc.Idiyappam, in general is made out of rice flour but it can also be prepared in a healthy way with Ragi flour.

Ellu or Sesame or Gingelly is rich in Calcium, Magnesium, Iron, Zinc and dietary fiber. The Sesame has a very unique substances called Sesamin and Sesamolin. These two help in reducing the cholesterol level.

Ellu Idiyappam is a delicious and healthy dish. To prepare Ellu idiyappam, first you have to prepare Ellu Podi (Sesame Spice Mix). Once you prepare the podi, you can easily mix it with idiyappam. Podi can also be enjoyed with rice. Ellu podi can also be prepared in large quantity and stored in air-tight container.





Ingredients :

For Ellu Podi / Sesame spice mix :

1. Black Sesame Seeds (Karuppu Ellu) - 1 tbs
2. White Sesame Seeds (Vellai Ellu) - 1/2 tbs
3. Urad Dhal (Ulunthu) - 1 tsp
4. Channa Dhal (Kadala Paruppu) - 1/2 tsp
5. Red Chilly - 2 or 3
6. Salt - Needed Qty

Dry roast all the above ingredients except salt. Dry grind with needed amount of salt. Keep aside.

For Ellu Idiyappam :

1. Broken Idiyappam - 2 Cups (Frozen or Fresh). Click here for cooking procedure.
2. Ellu Podi
3. Sesame Seeds oil/Gingelly Oil/Nallennai - 1 tbs

Procedure :

1. Mix all the above ingredients together.

2. If needed seasonw with mustard, urad dhal and curry leaves.

3. Serve with coconut chutney.

Pavarkaai Podi (Bittergourd Podi)


The first time I tasted this podi in one of our relatives place. When I asked them for the recipe, they said, it was store bought. But, it was like a home made stuff and I loved it. When we left, they gave me a pack of this podi. After we finished that pack, I prepared the podi at home and it turned out good.

Ingredients :

1. Pavarkaai / Bitter Gourd - 2
2. Yogurt - 1 tbs
3. Red Chilly - 2 or adjust to your taste
4. Cumin Seeds - 3/4 tsp
5. Coriander Seeds - 1/4 tsp
6. Urad Dhal - 1 tsp
7. Channa Dhal - 1/2 tsp
8. Tamarind - Small qty
9. Asafoetida - 1/4 tsp
10. Turmeric Powder - 1/2 tsp
11. Mustard - 1 tsp
12. Oil - 1/2 tbs
13. Salt - Needed Qty




Procedure :

1. Wash, dry and grate the bitter gourds. (While grating, remove the seeds).
2. Squeeze the bitter gourd well. Spread it on a paper towel and leave it as such for 10 minutes.
3. Now, mix it with a table spoon of yogurt. Keep aside for 30 minutes. Then, squeeze well and keep aside.
4. Meanwhile, dry roast urad dhal, channa dhal, cumin seeds, coriander seeds, tamarind and red chilly. Transfer to mixer jar and let it cool.
5. Grind to a fine powder. Keep aside.
6. In a pan, add oil and splutter mustard. Add asafoetida and fry for a second.
7. Now, add the bitter gourd, turmeric powder and salt. Keep frying in low heat for about 15 minutes.
8. Add the ground powder and mix thoroughly. Keep it on a low flame for few minutes.
9. Cool and transfer to an air-tight container.
10. Serve over the hot rice with a dollop of ghee.

Kollu Idly Podi (Horsegram Chutney Powder)


I have been using my Mom's method for Idly podi. This time, I just went ahead with my own ingredients and measurements and prepared another variation for Idly Podi. I used the healthy ingredient Kollu (Horsegram) along with other dhals. Kollu is rich in fiber and it has lot of medicinal value. Read more about Horsegram health benefits here. Ingredients :

1. Urad Dhal - 1/2 Cup
2. Channa Dhal - 1/4 Cup
3. Horsegram (Kollu) - 1/4 Cup
4. Curry Leaf - 8 (washed & dried)
5. Black Sesame Seeds - 1/2 tbs
6. White(washed) Sesame Seeds - 1/2 tbs
7. Asafoetida - 1 tsp
8. Red Chilly - 10 or adjust to your taste
9. Salt - Needed Qty




Procedure :

1. Dry roast all the ingredients separately. (Take care while dry roasting. Do it in medium flame)
2. Transfer to a small mixer container.
3. Add salt to the contents.
4. Coarsely powder the contents.
5. Serve with Idly and Dosa.
