Sorakkai Paal Kootu / Sorakkai Sweet Kootu / Bottlegourd Curry


Bottle gourd is rich in essential minerals, iron and protein. Apart from these, it is rich in fibre which helps in preventing constipation and other digestive disorders.

This kootu (Curry) is totally different from our usual kootu. Here the vegetable is cooked in milk and the taste is enhanced with the addition of jaggery / sugar. This can also be served with any Indian bread. Kids will love this combo.

Ingredients :

1. Sorakkai / Bottle gourd - 2 Cups (Chopped)
2. Bengal Gram / Channa Dhal - 1/2 Cup (Cooked)
3. Milk - 1/2 Cup (Boiled and cooled)
4. Turmeric Powder - A Pinch
5. Sambar Powder - 1/2 tsp
6. Jaggery / Sugar - 1 tsp
7. Salt - Needed qty
8. Oil - 1 tsp

To Grind :

1. Coconut - 1.5 tbs
2. Green Chilly - 1 or Adjust to your taste

Grind to a pasate with little water. Keep aside.

For Seasoning :

1. Mustard - 1/2 tsp
2. Urad Dhal - 1/2 tsp
3. Oil - 2 tsp

Heat oil in a pan. Splutter mustard. Add urad dhal. Fry till golden brown. Transfer to a bowl. 




Procedure :

1. In a pan, add a tsp of oil and chopped bottle gourd. Saute for few seconds. Add turmeric powder, sambar powder and salt. Combine everything together.

2. Add a little water and milk. Allow the vegetable to cook on a medium flame. 

3. Now, add cooked dhal, coconut-chilly paste and jaggery. Let the contents thick. 

4. Switch off the stove. Pour the seasoning and mix the contents once.

6. Serve with any rice / Indian Bread.

Note:

1. You can cook vegetable in water and add milk before STEP-4. 

2. You can avoid jaggery/sugar and just prepare it like usual kootu.

Poosanikai Mor Kootu / Ash Gourd Kootu


Ash gourd kootu is quick and easy to prepare. This goes good with any spicy kuzhambu like Milagu Kuzhambu. 

Ingredients :

1. Poosanikai/Ash gourd - 2 Cups (Cut in to small cubes)
2. Coconut - 1/2 Cup
3. Green Chilly - 1 (Small) or Adjust to your taste
4. Cumin Seeds - 3/4 tsp
5. Yogurt/Curd  - 1/2 Cup
6. Salt - Needed Qty

For Seasoning :

1. Mustard - 1 tsp
2. Urad Dhal - 1 tsp
3. Curry Leaves - A Few
4. Coconut Oil - 1 tsp

Heat oil. Splutter mustard. Add urad dhal and fry till golden brown. Switch off the stove. Add curry leaves. Keep aside.




Procedure :

1. Grind coconut, green chilly and cumin seeds together to a fine paste. Keep aside.

2. In a pan, cook ash gourd with salt. (Add a little quantity of water for cooking. Don't over cook.)

3. Now, add the coconut paste.

4. Allow the content to cook for few minutes.

5. Switch off the stove. Pour the seasoning over the cooked contents.

6. When the contents are warm, add yogurt/curd. Mix well.

7. Serve with Vatha Kuzhambu Sadam/Kara Kuzhambu Sadam/ Milagu Kuzhambu Sadam.

Carrot & Peas Kootu

This carrot and peas kootu is bit different from the usual procedure. We don't have to add any dhal. I learnt this from my MIL. This goes good with "Milagu Kuzhambu" & "Kara Kuzhambu"

Ingredients :

1. Carrot - 1/2 Cup (Chopped)
2. Peas - 1/2 Cup (Fresh/Frozen)
3. Coconut - 1/4 Cup (Grated)
4. Onion - 2 tsp (Chopped)
5. Green chilly -1
6. Red Chilly - 1
7. Cumin Seeds - 1 tsp
8. Mustard - 1 tsp
9. Urad Dhal - 1 tsp
10. Curry Leaf - For garnishing.
11. Oil - 2 tsp
12. Salt - Needed qty



Procedure :

1. Heat oil in a pan. Pop mustard and then add urad dhal. Transfer this to a bowl.

2. Cook carrot and peas with salt in the same pan.

3. Grind coconut, onion, cumin seeds and chillies.

4. Add the ground paste to cooked carrot and peas.

5. Add mustard and urad dhal. Cook for 5 minutes.

6. Remove from heat. Garnish with curry leaf.

7. Serve with rice.

Radish Greens Kootu


I used to make variety of dishes with radish greens and this time I made kootu. Radish greens are an excellent source of Calcium. When compared to the radish roots, greens are six times richer in Vitamin C. The greens also have substantial amount of Thiamine and Iron.




Ingredients :

1. Radish Greens - 4 Cups (Chopped)
2. Toor Dhal - 1/2 Cup (Cooked)
3. Sambar Powder - 1.5 tsp or adjust to your taste
4. Onion - 1/2 Cup (Chopped)
5. Tomato - 1 (Chopped)
6. Salt -Needed qty
7. Mustard - 1 tsp
8. Urad Dhal - 1 tsp
9. Oil - 1/2 tbs
10. Coconut - 1/4 Cup (Grated)




Procedure :

1. In a pan add oil. Heat it and then add mustard and Urad dhal.

2. Now, add chopped onion and tomato. Fry well.

3. Add chopped greens. Fry well.

4. Add water and cook with salt and sambar powder.

5. When greens become tender, add the cooked dhal. Mix well.

6. Allow it to cook for another 5 minutes.

7. Add the ground coconut.

8. Serve with rice/chapathi.

Chayote Kootu/Chayote Dhal Curry - Reposted

Ingredients:


1. Chayote - 1
2. Moong Dhal - 1/2 Cup (Cooked)
3. Turmeric powder - 1/2 tsp
4. Coconut - 1/4 Cup
5. Green Chilly - 2 (Add more or less according to your taste)
6. Cumin - 1/2 tsp
7. Mustard - 1 tsp
8. Oil - 2 tsp
9. Salt - Needed qty
10. Curry leaf - Small qty
11. Coriander - Small qty





Procedure:

1. Take oil in a pan. Heat the oil. Pop mustard and keep it aside.

2.  Wash & peel chayote. Cut it in to small cubes.

3. Cook chayote with salt and turmeric powder in a pan.

4. Once the chayote is cooked, add cooked  moong dhal. Cover the pan with a lid.

5 .Grind the coconut, chillies and cumin together in a mixer.

6. Add the ground coconut masala to the contents in the pan.

7. Mix well and cook for another 5 minutes.

8. Pour the seasoning. Mix the contents once. Switch off the stove.

9. Garnish with curry leaves and coriander.

10. Serve hot with rice and any Indian bread.

Mochai Kootu


In our family, this kootu is a must during Pongal festival. My mom adds some Brinjal (green coloured) to this kootu. But, I used to prepare only with Mochai. This is very easy and tasty preparation.

Ingredients:

1. Mochai - 1 Cup (Fresh)
2. Channa Dhal - 1/2 tsp
3. Thoor Dhal - 1 tsp
4. Red Chilly - 2
5. Jeera - 1/2 tsp
6. Coconut - 4 tsp
7. Pepper - 1/2 tsp
8. Turmeric powder - 1/2 tsp
9. Oil - 1 tsp
10. Mustard - 1/2 tsp
11. Urad Dhal - 1/2 tsp
12. Salt - Needed qty
13. Curry leaf - Small Qty




Procedure:

1. Cook mochai ( field bean) with a pinch of salt and keep aside.

2. Now in a pan, dry roast all other ingredients except turmeric powder.

3. Grind the roasted ingredients and turmeric powder.

4. In a pan, add oil and pop mustard. The add urad dhal and when it turns golden brown add the cooked mochai, salt and little water.

5. Now, add the spice powder. Medium the flame. Cook for another 15 minutes or till contents are thick enough.

6. Finally add curry leaves. Serve hot with rice.

Avial


Ingredients:

1. Carrot - 1/4 Cup(Cut Veg)
2. Beans - 1/4 Cup(Cut Veg)
3. Peas - 1/4 Cup
4. Potato - 1/4 Cup(Cut Veg)
5. Drumstick - 1(Cut in to small pieces)
6. Plantain - 1/4 Cup(Cut Veg)
7. Onion - 1/4Cup(Finely chopped)
8. Green Chilly - 3 or 4
9. Coconut - 1 Cup
10. Cumin Seeds - 2 tsp
11. Turmeric powder - 1 tsp
12. Salt - Needed qty
13.Yogurt/Curd - 2 tsp
14.Coconut oil - 1 tsp
15.Veg oil - 2 tsp
16.Mustard - 1 tsp
17.Curry leaf - small qty
18.Coriander leaf - Small qty(Chopped)



Procedure:

1. Pressure cook all the cut vegetables with salt and turmeric powder for one whistle.

2. Meanwhile, grind the coconut, chillies and cumin seeds to a paste. Keep aside.

3. In a pan, heat oil and splutter mustard. Now add cooked vegetables and then ground coconut mixture.

4. Mix well and allow it to cook in a medium flame for about 5 minutes.

5.Add coconut oil and curry leaves, mix well. Switch off the stove.

6. When the contents are warm, stir in yogurt/curd. Mix well.

7. Garnish with Coriander.

8. Serve with adai/rice.
