Idly Upma

Idly Upma is a delicious breakfast dish prepared from leftover idly. This is very easy to prepare. If you want you can use fresh idly as well. I have already posted another variation of this upma with Idly Podi. Check Podi Idly Upma also.

Ingredients :

1. Leftover Idly - 10
2. Onion - 1 Cup (Finely Chopped)
3. Green Chilly - 2 (Chopped)
4. Curry Leaves - A few
5. Mustard - 1/2 tsp
6. Urad Dhal - 1/2 tsp
7. Salt - Needed Qty
8. Oil - 1 tbs
9. Coconut - 1 tbs (Grated)


Procedure :

1. Keep leftover idly in refridgerator overnight or at least for two hours.
2. Crumble idly well with fingers.
3. Heat oil. Splutter mustard. Add urad dhal. Fry till urad dhal turns golden brown.
4. Add onion, green chilly and curry leaves.
5. Saute till onion colour changes.
6. Add crumbled idly and a little quantity of salt.
7. Mix well. Keep in low flame for five minutes.
8. Add a little oil if the upma is dry.
9. Add grated coconut to enhance taste.
10. Serve hot with Coconut Chutney and Sambar.

Sweet Corn Sooji Upma

Sweet Corn Sooji Upma is a variation to usual Sooji/Rava Upma. Addition of vegetables makes the upma a healthy one. Coconut oil and coconut enhances the flavour and taste.

Ingredients :

1. Rava / Sooji - 1.5 Cups
2. Onion - 1/2 Cup (Chopped)
3. Carrot - 1 Small (Peeled and finely chopped)
4. Sweet Corn Kernels - 1/2 Cup (Cooked)
5. Green Chilly - 1 (Cut in to pieces) or Adjust to your taste
6. Grated Coconut - 2 tsp
7. Red Chilly Powder - 1/2 tsp
8. Salt - Needed Qty
9. Mustard - 1 tsp
10. Sunflower Oil - 1.5 tbs
11. Coconut Oil - 2 tsp
12. Coriander Leaves - To Garnish




Procedure :

1. Dry roast rava and keep aside.
2. In a pan heat oil and splutter mustard.
3. Add onion, carrot, chilly and corn. Fry till onion turns golden brown.
4. Add 2 cups of water, salt, red chilly powder and grated coconut. Allow the contents to boil well.
5. Once boiled, medium the stove. Slowly add the roasted sooji. Keep stirring while adding to avoid lumps.
6. Cover with lid.
7. Once cooked add coconut oil. Mix well.
8. Garnish with coriander leaves.
9. Serve hot with sambar and coconut chutney.

Vegetable Poha Upma stuffed Bell Pepper - with step-by-step pictures

I used to prepare stuffed rice but this time just for a change, I stuffed aval/poha upma. I used idly steamer this time to cook the bell pepper. You can use oven to prepare these stuffed dishes. I'l come up with another dish using oven method soon.




Ingredients :

1. Bell Pepper - 1 (Any colour)
2. Poha - 1 Cup (Soaked for 10 minutes)
3. Onion - 1/4 Cup (Finely Chopped)
4. Peas - 1/4 Cup (Fresh)
5. Tomato - 1 (Chopped)
6. Green Bell Pepper - 1/4 Cup (Chopped)
7. Green Chilly - 2 (Chopped) or adjust to your taste
8. Mustard - 1 tsp
9. Urad Dhal - 1 tsp
10. Pepper Powder - 1/2 tsp
11. Salt - Needed Qty
12. Oil - 1 tbs
13. Curry Leaves & Coriander - For Garnishing

Procedure :

1. Wash and dry Bell pepper.





2. Cut the top of the bell pepper. Remove seeds.





3. Brush some oil and throw some pepper and salt. Keep aside.




4. Now, in a pan add oil. Pop mustard and then add urad dhal.
5. Add chopped onion, tomato, bell pepper, green chillies and peas. Fry well.
6. Add soaked and squeezed poha. Mix well. Cook for 5 minutes. Keep aside.




7. Now, Place the bell pepper in idly steamer. Steam for 10 minutes or till cooked.







8. Now, stuff it with the poha upma.
9. Cook for another five minutes.



10. Enjoy hot with Sauce or Chutney.

Fruit Bread Upma

This is just a variation from our usual upma. This is quick and easy to prepare.

Ingredients :

1. Whole Wheat Bread - 6 Pieces (Cut in to small pieces)
2. Mixed Fruits - 1 Cup (I used apple, plum, pear and guava(removed the seed part))
3. Onion - 1/4 Cup
4. Mustard - 1 tsp
5. Oil - 1/2 tbs
6. Lemon Juice - 2 tsp
7. Orange Juice - 2 tsp
8. Water - 1/2 Cup
9. Red Chilly Powder - 1 tsp or more
10. Garam Masala - 1 tsp
11. Salt - Needed qty

12. Coriander - for garnishing






Procedure :


1. In a pan, add oil. Then pop mustard.
2. Now, add the onion. Fry the till it turns light brown in colour.
3. Add the cut fruits. Fry them for few minutes. Then add water.
4. Cover the pan with lid and allow the contents to cook.
5. After 5 minutes, add the cut bread pieces, garam masala, salt and red chilly powder.
6. Mix well. Cover with the lid. Keep as such for few minutes.
7. Take out of stove, add the orange and lemon juice. Mix well.
8. Garnish with coriander.
9. Serve hot.

Sprouted Black Channa & Tamarind Poha Upma

Tamarind poha upma is the quickest, easiest and tastiest dish. I learnt this from my mom. Mom used to add peanuts to this upma but just for a change, this time I replaced peanuts with sprouted black channa.

Ingredients :

1. Poha (Thick) - 2 Cup
2. Sprouted Channa - 1/2 Cup (Cooked)
3. Onion - 1/2 Cup (Chopped)
4. Tamarind Juice (thick consistency) - 1/4 Cup
5. Turmeric Powder - 1 tsp
6. Oil - 1/2 tbs
7. Asafoetida - 1/2 tsp
8. Mustard - 1 tsp
9. Red Chillies - 3 or adjust to your taste
10. Curry leaf - few
11. Salt - Required qty



Procedure :

1. Wash poha and soak it in water for 5 minutes
2. Drain water and squeeze out any extra water from the poha.
3. Add turmeric powder, salt and tamarind juice. Mix well.
4. Keep it as such for 5 minutes.
5. Meanwhile, heat oil and then add mustard. Once it get popped, add asafoetida, red chillies and curry leaf. Fry for sometime.
6. Then add the onion. Saute till onion turns to golden brown.
7. Now, add the poha and cooked channa.
8. Mix well and keep in medium flame for another 5 - 10 minutes.
9. Serve hot with coconut chutney or just the upma alone.

Podi Idly Upma / Chutney Powder Idly Upma

This is a simple variation to usual idly upma. I make this whenever I get bored of our regular idly upma. I've not yet posted the usual idly upma recipe too. I'l be posting it soon.

Ingredients:

1. Idly - 8 (Fresh or leftover)
2. Onion - 1/2 Cup (Finely Chopped)
3. Red Chillies - 2 (If you need upma to be more spicy else don't add!)
4. Urad dhal - 1 tsp
5. Mustard - 1 tsp
6. Oil - 1 tbs
7. Idly podi/chutney powder - 3 tsp or adjust to your taste
8. Curry Leaf - Small qty



Procedure :

1. Crumble idlies. Add the chutney powder.
2. Mix both the crumbled idlies and chutney powder together.
3. Just add a tsp of oil to this mixture. Keep aside.
4. Now, in a pan add the remaining oil.
5. Add mustard, wait till it pops. Now, add urad dhal and red chillies. Fry well.
6. When Urad dhal turns golden brown, add the onion and curry leaf.
7. Fry till onion turns golden brown.
8. Add the idly and chutney powder mixture. Medium the stove.
9. Mix completely. Keep as such for few minutes.
10. Turn off the stove.
11. Serve hot. No side dish is needed.




Note :

1. Don't add extra salt because there would be salt in idly as well in chutney powder.
2. If you don't have onion or you don't like onion, you can make it without onion too. That would also taste great.

Vermicelli Upma

This is one of the easiest dishes that could be prepared in less time. I've just made it with onion and tomato. If you want to make it healthier you can add vegetables too.


Ingredients:

1. Vermicelli - 2 Cups
2. Onion - 1 Cup (Finely Chopped)
3. Tomato - 1/2 Cup (Finely Chopped)
4. Green Chillies - 4 or adjust to your taste
5. Water - 3.5 Cups
6. Salt -Needed qty
7. Mustard - 1 tsp
8. Channa Dhal/Urid dhal - 1 tsp
9. Oil - 1 tbs




Procedure:

1. Dry roast vermcelli and keep aside.
2. In a pan, add oil. Pop mustard. Then add dhal, fry for a minute.
3. Now, add onion and tomato. Fry till onion turns golden brown.
4. Add salt and water. Allow it to boil well.
5. Now, add the roasted vermicelli.
6. Medium the flame. Close the pan with lid.
7. Inbetween, stir now and then to avoid vermicelli sticking to the pan.

Veggie Poha Upma


Whenever I think of making some simple and quick dish, definitely poha would be my choice. Any dish with poha would take less than 20 minutes. With Poha, I normally prepare Kesari, Puli Aval, Veggie Poha and Payasam. Among these, I have already shared the recipe for the Kesari. In my school days, my mom used to prepare one simple sweet poha dish with coconut and sugar for evenings. That would also taste great. This Veggie Poha is very healthy one and I love it for the great taste. Hope you would also enjoy the taste.



Ingredients:


1. Poha/Aval - 1.5 Cups (thick)
2. Onion - 1/4 Cup (Finely Chopped)
3. Carrot - 1/4 Cup (Finely Cut)
4. Bell Pepper - 1/4 Cup (Finely Cut)
5. Coriander - 1/4 Cup (Finely cut to garnish)
6. Green Chilly - 3 (Cut in to pieces)
7. Lemon Juice - 1 tsp
8. Turmeric powder - 1/2 tsp
9. Garam Masala - 1/2 tsp
10. Cashew nut - 5 (broken)
11. Groundnut/Peanut - A handful (either cooked or roasted)
12. Oil - 1 tbs
13. Salt - Needed qty
14. Sev - Small qty (Optional)

Procedure:

1. Wash and drain aval/poha and keep aside for 10 minutes.
2. Meanwhile, take a pan and add oil. Fry cashew and then add all the vegetable and fry well.
3. Now, add the turmeric powder, garam masala and salt to the vegetable and mix well.
4. Add the poha, groundnut, sev and then lemon juice and mix well.
5. Garnish with chopped coriander and serve hot.
