Murunga Keerai Vadai (Drumstick Leaves Fritters)

Murunga Keerai Vadai is a delicious tea time snack.


Ingredients :

1. Channa Dhal - 1 Cup
2. Thoor Dhal - 1/2 Cup
3. Red Chilly - 3 or Adjust to your taste
4. Fennel Seeds - 1 tsp 
5. Asafoetida - 1/2 tsp
6. Chaat Masala - 1/2 tsp (Optional)
7. Garam Masala - 1/2 tsp (Optional)
8. Drumstick Leaves - 1 Cup 
9. Onion  -  1/2 Cup (Finely Chopped)
10. Ginger - 1 inch piece (Chopped Finely)
11. Curry Leaves  -  1 Sprig
12. Salt - Needed Qty
13. Oil - For deep frying


Procedure :

1. Soak channa dhal, thoor dhal and chillies together for 2 hours. 

2. Drain water. Take a handful of soaked dhal. Keep it aside. 

3. Grind the remaining dhal and chillies along with fennel seeds and asafoetida to a coarse mixture.

4. Now combine chaat masala, garam masala, onion, ginger, curry leaves, drumstick leaves, salt, soaked dhal and ground mixture. Mix well.

5. Make equal sized balls from the mixture.

6. Gently flatten the balls and deep fry in batches of 4 vadas per batch.

7. You will get around medium sized 16 vadas for this measurement.

8. Serve hot with a cup of tea or coffee.

Sprouted Horsegram & Sprouted Channa Fritters

This delicious tea time snack is very easy to make and it is a healthy snack as it is prepared with sprouted horsegram and sprouted chickpeas. 

Ingredients :

1. Sprouted Horsegram - 1 Cup
2. Sprouted Channa - 3/4 Cup
3. Red Chilly - 4 or Adjust to your taste
4. Rice Flour - 1 tsp
5. Corn Flour - 1 tsp
6. Fennel Seeds - 1 tsp
7. Garam Masala - 1/2 tsp
8. Coriander - 2 tsp (Finely Chopped)
9. Curry Leaves - A few
10. Salt - Needed Qty
11. Oil - For frying

Procedure :

1. Coarsely grind horsegram, channa and red chillies along with salt. Just sprinkle a little water while grinding. 

2. Combine rice flour, corn flour, fennel, garam masala, corainder and curry leaves to the ground mixture.

3. Make small balls and gently flatten them.

4. Heat oil and slowly put few vadas at a time.

5. In medium flame, fry till golden brwon.

6. Serve with Coconut chutney and Tomato sauce.

Tapioca and Peas Vada / Bonda

It's high time I prepared anything with Tapioca (Maravalli Kezhangu). I bought frozen tapioca from Indian store this weekend. I used to make Tapioca vada but never tried with peas. Just for variation in taste, I added peas. The Vada looked too good with slight greenish tinge with the usual golden brown colour. Inside it was green. My hubby and I enjoyed it with a cup of tea. With the same batter, with the addition of few ingredients, I made Bonda too. That too turned out to be good.



Ingredients :

1. Tapioca - 1 Cup (Grated)
2. Peas (Fresh/frozen) - 1/2 Cup
3. Urid Dhal - 1/2 Cup
4 Green Chillies - 3 (Adjust to your taste)
5. Ginger - 1 inch piece (Grated)
6. Coriander -1/2 Cup (Finely Chopped)
7. Curry Leaf - Small qty
8. Salt - Needed qty
9. Oil - For frying

Procedure :

1. Soak Urid dhal for 2 hours.
2. Cook peas and keep aside.
3. Grate tapioca.
4. Grind dhal and peas separately.
5. Now, mix ground dhal, peas and grated tapioca.
6. Add salt, coriander and curry leaf to the batter.
7. Heat oil and make crispy vadas.
8. Serve hot with chutney.

For Bonda,

I just added 1 tsp pepper, 1/2 tsp jeera and 1/4 cup grated coconut to the same vada batter and made them in to bonda.

Medu Vada / Urad Dhal Vada

This is a easy to make snack. This Vada/Vadai is important for any festival or function. During festival or fasting days, we used to prepare this vadai without onion. 




Ingredients :

1.Urad dhal - 1 Cup
2.Onion - 1/4 Cup (Finely chopped)
3.Ginger - 1 inch piece (Finely cut)
4.Green chilly - 2 (Finely cut)
5.Salt - Needed qty
6.Oil - For frying

Procedure :

1.Wash and soak urid dhal for about 3 hours.
2.Grind to a fine paste.
3.Add salt, finely chopped onion,ginger and chillies.
4.Heat oil and make small round vadas.
5.Serve hot with chutney.

Masal Vada


Ingredients:

1. Channa Dhal - 1 Cup
2. Thoor Dhal - 1 Cup
3. Green Chilly - 4 (Finely chopped)
4. Onion - 1 Cup (Finely chopped)
5. Ginger - 1 inch piece (Finely chopped)
6. Curry leaf - Small qty
7. Coriander - 1/4 Cup (Finely Chopped)
8. Salt - Needed qty
9. Oil - Needed qty for frying



Procedure:

1. Soak both channa dhal and thoor dhal together.

2. Drain the water and then grind them coarsely.

3. Add the other ingredients. Mix well.

4. Heat oil and make small round vadas.

5. Serve hot.

Vegetable Masal Vada

This Vada can be made in less time. I can say, this is a healthy snack as it contains dhal and vegetables which are quite a good source of proteins,vitamins and minerals. This is a quick snack suitable for tea time.



Ingredients :


1.Thoor dhal - 2 Cups
2.Carrot - 1/2 Cup (Grated)
3.Beans - 1/4 Cup (Finely cut)
4.Bell pepper - 1/4 Cup (Finely cut)
5.Onion - 1/2 Cup (Finely Chopped)
6.Curry leaf - Small qty
7.Coriander - 1/4 Cup (Finely chopped)
8.Ginger - 1 inch piece (Finely Cut)
9.Chilly Powder - 2 tsp
10.Garam Masala - 1 tsp
11.Salt - Needed qty
12.Oil - To fry Vadas

Procedure :

1. Soak thoor dhal for about 45 minutes to 1 hour.

2. Drain water and grind coarsely without adding water.

3. Now, to the ground thoor dhal, add all the above ingredients except oil.

4. In a pan, heat oil and make small vadas and deep fry.

5. Serve hot with a cup of tea.
