Potato Bonda / Aloo Bonda

This delicious fried snack is my favourite one. I learnt this recipe from my friend's Mom when we visited our friend during our college days. She served us with a very tasty coconut chutney.  This is a fulfilling snack when served with a cup of hot coffee or tea.

Ingredients :
For the outer covering,

1. Besan / Kadala Maavu - 1 Cup
2. Ginger-Garlic Paste - 1 tsp
3. Red Chilly Powder - 3/4 tsp 
4. Turmeric powder - 1/2 tsp
5. Salt - Needed Qty
6. Oil - For deep frying

For the filling,

1. Potato - 4 (Medium Sized, boiled and mashed)
2. Onion - 1 (Finely chopped)
3. Chilly powder - 1 tsp
4. Coriander - Little qty (Finely chopped)
5. Salt - Needed Qty
6. Turmeric powder - 1/2 tsp
7. Garam masala - 1 tsp
8. Cumin Seeds - 1 tsp
9. Mustard - 1/2 tsp
10. Oil - 1/2 tbs




Procedure :

1.Heat oil in a pan. Splutter mustard and cumin seeds. Add chopped onions and saute till onion turns golden brown.

2. Add Coriander, salt, red chilly powder, turmeric powder, garam masala and mashed potato.

3. Mix well. Close the pan with lid. 

4. Cook on medium flame.

5. After 10 minutes. Remove from stove. cool and then make balls.

6. Prepare batter by combining besan, salt, ginger-garlic paste, red chilly powder, turmeric powder and a little quantity of water. Add more water if needed. Batter should be of Idly batter consistency.

6. Roll balls over the batter and deep fry in oil.

Dosa Batter Bonda - A Quick Snack

This Bonda is a quick snack and it is the best way to use the leftover dosa /idly batter.

Ingredients :

1. Dosa batter - 1 Cup
2. Rice Flour - 1/2 Cup or little more
3. Onion - 1/2 Cup (Finely Chopped)
4. Green Chillies - 2 (Cut in to pieces)
5. Pepper - 1/2 tsp
6. Coconut - 1 tbs (Grated)
7. Curry leaf - Few
8. Coriander - 1 tbs (Finely Chopped)
9. Salt - Needed qty (take care while adding as there would be already salt in dosa batter)
10. Oil - For Frying






Procedure :

1. Combine all the ingredients except oil.

2. Heat oil in a kadai.

3. Take the ladle full of batter and put them in oil. (You can also use hands to drop the bondas in to oil)

4. Simmer the stove. Fry till it becomes golden brown and crisp.

5. Serve hot with chutney or sambar.

Urad Dhal Bonda

This is a easy and delicious evening snack. This tastes great with Sambar and Chutney



Ingredients:

1. Urad dhal - 2 Cups
2. Green chilly - 2
3. Ginger - 1 inch piece (Chopped)
4. Pepper - 1 tsp
5. Coconut - 1/4 Cup (Chopped pieces)
6. Coriander - 1/4 Cup(Optional)
7. Curry leaf - Small qty
8. Oil - Oil to fry
9. Salt - Needed qty

Procedure:

1. Soak urad dhal for 45 minutes.

2. Drain water and grind the dhal along with green chillies in the mixer without water.

3. Just sprinkle a little water to make the paste smooth and fluffy.(If you add more water then your Bondas will be oil soaked)

4. Combine the other ingredients (except oil) to the ground batter.

5.Heat oil in a kadai and fry bondas till crispy.

6.Serve hot with coconut chutney and sambar.
