Mudakathan Dosai

Mudakathan keerai is a type of medicinal creeper. It is said to cure joint pain problems.  In English it is called as “Balloon Vine”.  Mudakathan keerai has lots of health benefits. We can add it in any form in our daily diet. Luckily, I have this miracle creeper in my garden. The one best recipe that we always prepare at home is Mudakathan Dosai.




Ingredients :

1. Idly Rice - 1 Cup
2. Mudakathan Keerai - A Fistful
3. Fenugreek Seeds - 1/2 tsp
4. Salt - Needed Qty




Procedure :

1. Soak rice and fenugreek seeds together for 3 hours.

2. Grind rice and keerai along with salt.

3. Allow the batter to ferment for atleast 8 hours.

4. Prepare soft or crispy dosas. Serve with any hot chutney (Garlic / Red Chilly Chutney)

Vegetable Uttapam


This is a delicious and healthy breakfast. 


Ingredients :

For Batter
1. Idly Rice - 2 Cups
2. Urad Dhal - 1/2 Cup
3. Fenugreek Seeds - 1 tsp
4. Poha / Aval - 1 tbs

For Veg Uttapam
1. Carrot - 1 Cup (Grated)
2. Onion - 1/2 Cup (Chopped)
3. Green Chilly - 2 (Finely Chopped)
4. Coriander - 1/2 Cup (Finely Chopped)
5. Mustard - 1 tsp
6. Oil - 1/2 tbs

Splutter mustard. Add all the vegetables and saute for few minutes. Keep aside.


Procedure :

Uttapam Batter Preparation :

1. Soak idly rice, urad dhal and fenugreek seeds together for 3 hours. 

2.  Just before grinding, wash poha and squeeze extra water. Add to other ingredients kept for grinding.

3.Combine everything and grind to a smooth batter.

4. Add salt and mix well.

5. Allow to ferment for atleast 8 hours.

Vegetable Uttapam Preparation :

1. Add  vegetables to the batter. Mix well.

2. Heat a non-stick tawa. Make a thick & small sized dosa. Pour oil. 

3. Medium the flame. Cook for few minutes before flipping to other side. 

4. Once the uttapam is cooked on both the sides, serve hot with Chutney and Sambar.

Kollu Dosai (Horsegram Dosa)

This is an another healthy breakfast item. You can check Kollu Idly here, which I posted some days ago. You can use the same idly batter to make dosa. But, here I have tried little variation and it tasted delicious.

Ingredients :

1. Idly Rice - 2 Cup
2. Horsegram - Little less than half-a-cup
3. Fenugreek Seeds - 1 tsp
4. Salt - Required qty




Procedure :

1. Soak horsegram and fenugreek together for atleast 8 hours.

2. Soak rice just 3 hours before grinding.

3. Grind them both separately.

4. Mix ground rice and horsegram together with little salt.

5. Ferment for 8 hours.

6. Make crispy dosas.

7. Serve with Milagai podi and any hot chutney.

Peas - Aloo Masala Dosa

The most loved and favourite dosa of our family. My mom often make this at home often and she prepares a very flavourful masala. It is not the usual masala that we eat in restaurants. I'm sure, the first thing that come to anyone's mind about the masala dosa would be it's crispiness. I've given the procedure for very crispy flavourful masala dosa.




Ingredients Needed for Crispy Dosa :

1. Raw Rice - 1 Cup
2. Idly Rice - 1 Cup
3. Urad Dhal - 1/2 Cup
4. Fenugreek - 1 tsp
5. Thoor Dhal - 2 tsp
6. Salt - Needed qty

Procedure :

1. Soak both raw and idly rice together for 3 hours along with fenugreek and thoor dhal.

2. Soak urid dhal just an hour before grinding.

3. Grind rice and urid dhal separately.

4. Mix them together in a vessel.

5. Add salt and mix well.

6. Allow it to ferment for atleast 8 hours before use.

Ingredients for Masala :

1. Peas - 1/2 Cup (Fresh)
2. Potato - 4 (Cooked and mashed)
3. Onion - 1/2 Cup (Finely chopped)
4. Tomato - 1 (Cut in to pieces)
5. Red chilly powder - 3 tsp (Adjust to your taste)
6. Garam masala - 1 tsp
7. Salt - Needed qty
8. Ginger-garlic paste - 1 tsp
9. Oil - 1 tbs
10. Coriander - 1/4 Cup (Finely Chopped)

Procedure :

1. Heat oil in a pan. Add ginger-garlic paste. Fry well till raw smell goes off.

2. Add onion and tomato and fry for sometime.

3. Now add peas, red chilly powder, garam masala and salt.

4. Add the mashed potato and mix well.

5. Keep the stove in medium flame and cover the pan with lid.

6. Stir occasionally. Take out from the stove after 20 minutes.

7. Add coriander and mix well.

8. Keep aside.





Make crispy thin dosas and keep the masala in the dosa and serve hot with chutney and sambar.

Set Dosa - Vadacurry

Whenever, we go to a restaurant, my in-laws order would always include this yummy combo Set Dosai - Vadacurry. Honestly, I've never tasted this Vadacurry before marriage. Even, if we go to a restaurant, my Dad won't allow us to order this. Because he had the impression that Vadacurry is always prepared from leftovers. So, I was thinking that it won't taste good. For the first time, I had this dosai/Vadacurry combo in Sangeetha Restaurant, Chennai. It tasted so good. But I never attempted it till my hubby's aunt visited us. She knew that everyone in our family love this combo. So she taught me the procedure and this is how, I learnt the preparation of Vadacurry/Set Dosai. Later, when I started to make Set Dosai often, I just made few changes to her orginal recipe and finally, arrived at a very good recipe of mine. Absolutely, it tasted great :-)




Recipe For Set Dosai :

Ingredients :

1. Raw Rice - 1 Cup
2. Parboiled Rice - 1/2 Cup
3. Urid Dhal - 1/4 Cup
4. Poha - 1/4 Cup
5. Fenugreek - 2 tsp
6. Channa Dhal - 2 tsp
7. Thoor Dhal - 1 tsp
8. Turmeric powder - 1/4 tsp (Optional)
9. Sugar - 1 tsp (Optional)
10. Salt - Needed qty

Procedure :

1. Soak rice, urid dhal, poha, fenugreek, channa dhal and thoor dhal together for 3 hours.

2. Then, grind and then mix salt and sugar.

3. Allow the batter to ferment for atleast 8 hours.

4. Just before making dosa, add the turmeric powder.

5. Make spongy dosa.

6. Serve hot with Vada curry.

Recipe for Vadacurry :

Ingredients :

1. Channa Dhal - 1/2 Cup
2. Thoor Dhal - 1/2 Cup
3. Red Chilly - 2
4. Onion - 1 (Finely Chopped)
5. Tomato - 4 (Finely Chopped)
6. Saunf - 1/2 tsp
7. Bay leaf - Small qty
8. Ginger-garlic paste - 1/2 tsp
9. Chilli Powder - 1.5 tsp
10. Garam Masala - 1 tsp
11. Oil - For frying Vada
12. Salt - Needed qty
13. Coriander - Small qty




Procedure :

1. Soak both the dhal along with red chill for 1 hour.

2. Drain water and then grind.

3. Heat oil in a pan and make crispy vadas.

4. Now, in another pan add oil. Then, add saunf,ginger-garlic paste and fry till raw smell goes.

5. Add Bay leaf, chopped onion and tomatoes and fry well.

6. Add chilli powder, garam masala and salt. Mix well.

7. Cut vadas in to pieces and add them to the contents in the pan. Mix well.

8. Garnish with coriander and serve hot with Set Dosai.




Note: You can use the leftover masal vadas also.

Colorful Mini Dosas

Mini dosas are my favourite dish right from my childhood. I still remember, as kids how much my sister and I loved this. Mom used to make this spongy mini dosas during dinner only. That is because she could do it leisurely. Most of the times, we used to have our dinner in the open space in front of the house under moon light. I always loved to have them with sugar & ghee. We enjoyed listening to our grandma's stories while relishing these dosas. We had even named it as "Ambuli dosai". In tamil, Ambuli means "Moon". I'm not sure, why we called it so!! ( May be for the shape or we ate them under moon light) The colorful mini dosa is healthy too as I'v utilized the natural colors of vegetables.




Ingredients :

1. Dosa Batter
2. Coriander
3. Carrot
4. Tomato
5. Oil

Procedure :

1. For green color, take small quantity of batter and grind it with coriander.

2. For orange color, take small quantity of batter and grind it with tomato.

3. For light yellow/sandal color, cook carrot and then grind with batter.

4. When ready, make small spongy dosas.

5. Serve hot.

Note: If you want, you can add coriander chutney, tomato chutney, carrot chutney etc..Those additions will make your dosa taste too good :-)

Rava Dosai


My amma is such a expert in Rava Dosa.I'v always wondered how she makes such a wonderful crispy rava dosas. Just learnt the secret and have started trying out these days.



Ingredients :

1.Rava/Sooji - 1 Cup
2.Maida - 1 Cup
3.Rice Flour - 1 Cup
4.Cumin seeds - 1 tsp
5.Pepper powder - 1/2 tsp
6.Onion - 1(Chopped)
7.Green Chillies(optional) - 3(finely chopped)
8.Curry leaf - small qty
9.Curd - 2 tsp
10.Water - 6 Cups or more
11.Salt - Needed qty
12.Oil - little qty

Procedure :

1.In a vessel,add all the above ingredients except oil(the consistency of the batter should be very thin/watery)

2.Once the batter is ready, keep aside for 30 minutes.

3.After 30 minutes, heat a non-stick dosa tawa.

4.Take one ladle full of batter and start pouring it from the edge of tawa towards centre.

5.Now, pour oil in the sides.

6.Cook for a minute in high flame(or till it becomes crispy) and turn the dosa and cook that side also for a minute.

7.Serve hot with sambar and coconut chutney.

Note : 
After 2 or 3 dosa, clean the tawa with wet clean white cloth(this avoids dosa sticking to the pan)

Venthaya Dosa


Venthaya Dosa is my husband's all time favourite and I prepare it often. My MIL gave me this recipe. She used to prepare onion chutney as well sambar as side dishes for this dosa. Between these two, I prefer sambar. I normally make sambar for dosai bit different from usual procedure. I will give the sambar preparation in my next post.

Fenugreek is good for health and is known to have anti-diabetic property. The interesting information is it helps in reducing weight.



Ingredients :

1. Idly Rice - 3 Cups
2. Raw rice - 1 Cup
3. Urad Dhal - 1/2 Cup
4. Fenugreek seeds - 1/2 Cup
5. Salt - Needed qty

Procedure :

1. Soak rice, dhal & fenugreek seeds together in water for 4 hours.

2. Grind them.

3. Add needed salt and then mix well.

4. Allow it to ferment for atleast 8 hours before use.
