Celebrating this New Year -2010 with Kaju Katli


I'm very happy today because at last, I successfully made Kaju Katli after trying out for so many times. I'm ready to Welcome the New year with my delicious Kaju Katli..

I wish you all a very Happy New Year. May this New year bring all happiness and prosperity to all :-)

Ingredients:

1. Cashew (Kaju) - 2 Cups
2. Sugar - 1 Cup
3. Water - 1/2 Cup
4. Ghee - Little qty (Just enough to grease tray)
5. Elachi Powder - 1 tsp (Optional)

Procedure:

1. Dry roast the cashews and grind to a fine powder in a mixer. (Do not add water)
2. Take sugar and elachi powder in a pan and then add water. Allow it to boil well.
3. Once the sugar get completely dissolved and it forms a syrup, put off the stove and the add the powdered cashew.
4. Keep stirring without any lumps and when all the syrup get absorbed and become thick, transfer the contents to ghee greased tray.
5. To have smoother upper surface, grease the rolling pin with ghee and roll it on the contents.
6. Now, cut in to desired shape.

Note: You can use silver foil for decoration.
