Kovakai Karakari/Tindora Curry


This is the easiest curry.It need just a few ingredients.I love Tindora and often,I use this veggie in my cooking.Tindora has got a good medicinal value and is used widely in traditional Thai and Ayurvedic medicine.It is a good source of protein and fibre.

Ingredients :

1.Tindora - 2 Cups (Cut Veg)
2.Red Chilly Powder - 2 tsp or needed qty
3.Turmeric Powder - 1/2 tsp
4.Tamarind juice - 1 tsp
5.Salt - Needed qty
6.Oil - Small qty
7.Mustard - 1 tsp
8.Curry leaf - Small qty

Procedure :

1.Take a pan,add oil and pop mustard.

2. Add the cut tindora and fry for a minute.

3. Now add salt,turmeric powder and chilly powder. Mix well.

4. Keep the flame in medium and close the pan with lid.

5. Let it be as such for 10 minutes. Now,add the tamarind juice.

6. Mix well.Close the pan with lid. Let the flame be in medium.

7. Cook for another 20 minutes.

8. Garnish with curry leaf.

9. Serve with variety rice.
