Guest Post - 21 : Today's Guest - Subhashini


Today, Subhashini from "Food, The Spice of Life" is with us. She is a home maker who loves to cook. She is interested in singing and writing. Now, let us hear from her...

Nithu's Kitchen : Tell us about you Subha.
Subhashini : I am a home maker with very loving and understanding husband and a 2 year old princess. My hobby includes cooking, singing and of course blogging.

Nithu's Kitchen : How did you get this interest in cooking?
Subhashini : I love cooking because my family loves eating. I see cooking as an art. It fills my heart every time it meets one’s appetite. I have taken interest in the same.

Nithu's Kitchen : When did you start to cook and whom you consider as your role model?
Subhashini : I started active cooking from my college days and my sisters are my first teachers and my inspiration.

Nithu's Kitchen : What are your interests apart from cooking?
Subhashini : I love listening to old Hindi songs, I do sing as well, write Hindi poems and also do stitching and knitting.

Nithu's Kitchen : Who encouraged you to start a blog?
Subhashini : The person behind my blog is my husband. He is the one who encouraged me to write a food blog.

Nithu's Kitchen : What talent of yours made you as the Best Daughter-in-law of your family?
Subhashini : After my marriage, I came to know that my in-laws love good food and from here I found the key for every one’s heart in family and it was my cooking talent which has made me the best daughter in law.

Nithu's Kitchen : Who is your best critic?
Subhashini : My Father-in-law is best judge to give his verdict about my dishes. Since he is very keen about the taste, he always give some suggestion to improve my cooking. So, success of my blog is dedicated to everyone in my family.

Nithu's Kitchen: What do you have today to share with us?
Subhashini: CHANDRAKANTHI

Nithu's Kitchen : Why did you select this?
Subhashini: During my visit to my mom place I learnt this dish from my eldest sister and this is one of her traditional dish. I loved the taste and it was somehow very new experience for me.

CHANDRAKANTHI

Preparation Time: 15 -20 minutes
Cooking Time: 30-45 minutes
Makes: 20 medium sizes

Ingredients :

Split Green Gram Dal- 2 cup
Raw Rice-1 cup
Salt- ¼ tsp
Sugar- (Just check in the step of method)
Ghee-2-3 tabs
Oil or Ghee- For deep frying




Method :

Wash and soak rice and dal together for at least 3 hours.
Then drain water and grind this in wet grinder or mixer to fine paste.
The batter should be like dosa batter.
Now measure the batter in one cup and mix the equal amount of sugar in batter.
Add salt and mix well.
Now add the same quantity of water into batter.
Shift batter to a wide heavy bottomed pan.
Now keep the pan in medium heat and keep steering it.
Slowly batter will start getting thick.
Now grease a plate with ghee and keep aside.
Once you get the batter thickness like burfi thickness then remove it to grease plate and tap the plate so batter gets spread equally to whole plate.
Allow it get cool down for 5 minutes.
Grease a knife with little ghee and cut the batter in square size.
The traditional size of this is 4 cm/4cm.
Once it is completely cool down then heat oil in pan for deep frying.
After oil is heat enough then take a one piece of this burfi and fry till golden brown colour.
Serve hot or cooled.
