Round Up - Part 2 : Best Out of Waste

Appetizer - 2 Entries :

Ingredients: -

1. Jack Fruit Seeds – 1 cup (Pressure Cooked & ½ mashed & ½ grated)
2. Onion – 1 (finely cut)
3. Carrot – 1 (grated)
4. Cabbage – ¼ cup or less (grated)
5. Beans – 3 (finely cut)
6. Coriander leaves - ¼ cup (finely cut)
7. Garlic – 5 cloves (crushed)
8. Rice Flour – 1- 2 tsps
9. Corn Flour – 1 tsp
10. Chilly Powder – 1 tsp.
11. Garam Masala – ½ tsp.
12. Salt – required quantity
13. Oil – for frying.

Procedure:-

1. Mix all the ingredients together.
2. Make small balls & Keep it aside.
3. Heat oil in a pan.
4. Deep fry the balls.
5. Serve hot with tomato sauce.

Recipe Name : Palakottai Poricha Kuzhambu

Ingredients :

1. Moong / Thoor Dhal - 1 Cup (Dhal depends on your taste. Pressure cooked)
2. Jack Fruit Seeds – 1 Cup (Pressure cooked)
3. Sambar Powder - 2
4. Cumin Seeds - 1 tsp
5. Coconut - 5 tsp
5. Seasoning Vadagam – ½ ball
6. Curry Leaves
7. Oil - 2 tsp
8. Salt - Required quantity

Procedure :

1. Add a tsp of oil in pan, fry seasoning vadagam. Keep half the quantity of it aside.
2. In the pan, along with half the quantity of fried vadagam, add water, half split pressure cooked jack fruit seeds, sambar powder and salt. Cook it nicely till the raw smell of sambar powder disappears.
3. Add the cooked dhal and curry leaf. Mix well and cook till it thickens.
4. Now, add the ground paste and allow the contents to get mixed well. Remove from heat.
5. Atlast, add the remaining fried vengaya vadagam and mix well.
6. Serve hot with rice and ghee

Recipe Name : Arachuvitta Palakottai Sambar

Ingredients:

1. Jackfruit Seeds- 1 Cup ( Pressure Cooked & Split into half)
2. Onion- 1 big (chopped)
3. Thoor Dhal- 1 cup (Pressure cooked with ¼ tsps of Turmeric Powder)
4. Sambar Powder- 2 Tsps.
5. Tamarind Extract- 2 Tbsp. / more- depends on your taste & quantity
5. Mustard Seeds – ½ Tsps
6. Asafoetida- ½ Tsps
7. Curry Leaves
8. Coriander Leaves
9. Salt- Required Quantity
10. Jaggery – 1 pinch**

(You can also add any other vegetables (more than one too..) along with Jack Fruit Seeds to make sambar… depends on your taste… I have made it only with the seeds)

To Grind :

1. Coriander Seeds – 1 tsp
2. Cumin- ½ tsp
3. Red Chillies- 2
4. Channa Dhal – 1 tsp
5. Thoor dhal- 1 tsp
6. Grated coconut- 1/4 cup
7. Onion- 1 small piece

Fry the above ingredients from 1 to 5 and grind it to smooth paste along with the grated coconut & onion. Keep it aside.

Procedure :

1. Take 2 tsps of oil in pan & splutter mustard seeds, curry leaves & asafoetida.
2. To that add the pressure cooked & cut jack fruit seeds & finely cut onion.
3. Fry for 2 mins & add the tamarind extract to it along with the required quantity of sambar powder & salt. Bring to boil, till the raw smell of sambar powder goes.
4. Add the cooked & nicely mashed thoor dhal to the pan.Boil well.
5. To this sambar, add the ground paste. Mix thoroughly & bring it to boil. Cook for about 4-5 mins.
6. Garnish it with coriander. Serve.
7. **You can also add a pinch of jaggery to this sambar before removing it from the stove.

Ingredients :

1. Jack Fruit Seeds – 1 Cup ( Pressure Cooked)
2. Turmeric Powder – 1/ 2 tsp
3. Sambar Powder – 2 Tsps.
4. Salt- Required Quantity
5. Mustard Seeds – 1 Tsp.
5. Curry Leaves
6. Oil – Required Quantity.

Procedure :

1. Take oil in a pan & Splutter mustard seeds.Add curry leaves.
2. Now, add the cut Jack Fruit seeds, turmeric powder, sambar powder and salt.
3. In the medium flame allow the content to get roasted well.

Note : You can also add crushed garlic cloves(2 Nos.) & ¼ tsps of Sombu Powder / Garam Masala Powder.

Recipe Name : Parangi Pinju Kudal Pachadi (Pumpkin Middle Portion Curry)

Ingredients :

1. Pumpkin’s Middle Portion (Normally we used to discard the middle one with seeds –KUDAL) – 1 cup
2. Tamarind juice – 1- 2 table spoon
3. Green Chilly – 1
4. Red Chilly – 1
5. Onion(big) - 1 (cut into thin pieces)
6. Mustard seeds – 1 tsp
7. Split Urad dhal – 1 ½ tsp
8. Curry Leaves – few
9. Jaggery – 1 tsp
10*. Red Chilly Powder / Sambar Powder – ½ tsp. ( Refer Procedure No.5)

Procedure :

1. Deseed the tender pumpkin’s middle portion, if the seeds are big and cut into thin small pieces.
2. Take oil in a pan, splutter mustard seeds. Add urad dhal, red & green chillies, onion & curry leaves.
3. Then add the cut pumpkin middle portion, pour the tamarind juice & add salt.
4. Cook till the pumpkin gets cooked well. If needed, Take half of the quantity & blend it in a mixer/ mash it well with hand.
5*. If you want it a bit more hot & spicy, add half a teaspoon of Red chilly powder / sambar powder & cook well till the raw smell goes Or else you could add more green & red chillies, whatever suits you.
6. Before taking it from the stove, add a tsp of jaggery to it (enhances the taste).
7. Let the consistency be in a bit thick / in gravy form.
8. Garnish it with coriander leaves.
This goes well with Idly / Dosa / Roti / Rice.
