Ingredients :
1. Basmati Rice - 1 Cup
2. Onion - 1 (Chopped)
3. Garlic - 4 Cloves (Crushed)
4. Ginger - 1 inch piece (Chopped Finely)
5. Peas (Fresh/Frozen) - 1/2 Cup
6. Green chilly - 2 (Slit Vertically) (Adjust chilly according to your taste)
7. Mint Leaves - A Few
8. Paneer - 1 Cup (Cubed)
9. Bay leaf - 1
10. Star Anise - 1
11. Fennel Seeds - 1/2 tsp
12. Cardamom - 2
13. Cashew & Raisin - 1 tbs (Together)
14. Ghee - 4 tsp
15. Oil - 1 tbs
16. Salt - Needed Qty
17. Water - 1.5 Cups (Adjust according to your rice)
Procedure :
1. Wash and soak rice in water for 15 minutes. Set to drain.
2. In a pan, add 2 tsp of ghee. Spread paneer cubes. Fry till they change to golden brown. Keep aside.
3. In the same pan, add another 2 tsp of ghee. Roast cashew and raisin till they turn golden brown. Add rice and roast for few minutes. Switch off the stove. Let it cool.
4. In a pressure cooker, add oil. Put bay leaf, star anise, fennel and cardamom. Fry for few seconds.
5. Add crushed garlic, ginger pieces, green chillies, mint leaves and onion. Fry till onion turns to light brown colour.
6. Add peas, paneer cubes, water and salt. Let the contents boil well.
7. Add rice. Close the pressure cooker and put weight. Allow only one whistle. Switch off the stove.
8. Mix well before serving.
9. Serve hot with any veg kurma and raitha.
