Ulunthu Kozhukattai / Kara Kozhukattai / Spicy Urad Dhal Dumplings

This kozhukattai is my dad's favourite. I prepared this last weekend when he visited us. This kozhukattai is a must during Vinayagar Chaturthi Pooja.


Ingredients :

For Ulunthu Puranam (Filling) :

1. Urad Dhal - 1 Cup
2. Red Chilly - 2 or Adjust to your taste
3. Coconut - 2 tbs (Grated)
4. Asafoetida - 1/2 tsp
5. Mustard - 1 tsp
6. Curry Leaves - A Few
7. Gingelly Oil - 1 tbs (+1 tbs extra for greasing idly plates and palm)
8. Salt - Needed Qty


For Kozhukattai Dough (Outer Covering) :

1. Rice flour - 1 Cup
2. Water - 1.5 Cups (Approximately) Add more if needed.
3. Salt - 1/4 tsp
4. Oil

Boil water with 2 tsp of oil and salt. Add flour slowly to the boiling water and stir continously till it forms a dough. Switch off the stove. When the dough is warm, knead well to make it soft.

Procedure :

1. Soak urad dhal for atleast 2 hours along with red chilly.

2. Drain water completely.

3. Grind dhal, red chilly, asafoetida and salt together to a coarse consistency. 

4. Place the ground mixture on a oil greased idly plates.

5. Steam cook for about 10 minutes.

6. Let the mixture cool.

7. Now, crumble with a spoon. Keep aside.

8. Heat oil in a pan. Splutter mustard. Add curry leaves and coconut. Fry for few seconds.

9. Transfer the crumbled dhal mixture to the pan. Medium the flame.

10. Combine the ingredients together. Cook for 5-10 minutes.

11. Before you switch off the stove add coconut oil.

12. Once the mixture is warm, make small balls. Keep aside.


13. Grease your palm with oil. Take little amount of kozhukattai dough and make a ball.

14. Now, press it with your fingers gently to flatten the ball and then make a cup shape.

15. Place the filling inside (Ulunthu Puranam). Now, bring the edges of the cup together and make a ball.
(Don't have to make a beak shape at the top like modakam)

16. Grease idly plates with oil and place the kozhukattai.

17. Steam cook for 5 to 10 minutes.
